Recipe: Crispy Pan Fried Potatoes



Crispy Pan Fried Potatoes (4 servings)

Ingredients:
  • 4 to 5 potatoes
  • 1 tablespoon olive oil
  • Salt
  • Pepper
Steps:
  1. Scrub the potatoes clean if you want to eat it with the skin.
  2. Place potatoes in a pot and cover with water and some salt. Bring to a boil until they are fork-tender.
  3. Allow potatoes to cool and cut potatoes into cubes.
  4. Add oil and fry the potatoes.
  5. Stir the potatoes around then cook without stirring for several minutes (Super important for it to be crispy!)
  6. After awhile, flip potatoes to the other side.
  7. Add salt and pepper. Season potatoes till you are satisfied.
  8. If you like it more crispy, continue frying. If you prefer it soft, just stop any time.

Healthy

Not like a 3 day week is not short enough, I skipped classes today. So I only had 2 days of school this week. :/

Started the morning by going for a jog with G! Idk where I got my motivation from but I actually survived! I was like 100 to 200m behind her the whole time HAHA. We had to go to the mall to pay our phone plan so we jogged there and took a bus back. 


From our home to McAllister Mall: 6 km. 

Really an achievement unlocked! Haven't ran such a long distance in a long while. Never good at running long distances, never been a good runner to be exact. I totally hate running, I prefer playing sports to exercise. 

Pretty tree spotted on the way. 
Okay actually it was damn chill, I didn't even pant much. 
I was just jogging sooooo slowly and enjoying the surroundings.

Healthy lunch after the workout. 
Favourite egg and smoked salmon again. 
Topped with prawns, baby carrots and cherry tomatoes :D 

Tea break. Really love the fruit cake. I love those small pieces of fruit inside! 
Yah I ran and I ate it all back. Can NEVER resist ice cream and desserts :O

Cooked green bean soup with sweet potatoes again.

Recipe: Eggs Benedict

This is dedicated to my friends who wanted me to cook eggs benedict for you when I go back. I have compiled an easy eggs benedict recipe. You may want to try it on your own cause it's pretty simple! Not that I won't cook for you, but you can always try it out yourself first :D So far I have only tried it with smoked salmon, will try making it with pulled pork the next time round! Let me know how it goes if you do try it :)



Poached Eggs 

Ingredients:
  • Eggs
  • 1 to 2 teaspoons of vinegar
Steps:
  1. Bring water in a pot to almost a boil. If water is boiling, lower the heat until it is simmering. Add 1 to 2 teaspoons of vinegar.
  2. Crack an egg into a small cup. 
  3. Using a spoon, swirl water in a circular motion. While water is swirling, gently and slowly drop the egg with the cup near the surface of the water. It is alright to submerge the cup a little. 
  4. Use a spoon to nudge the egg whites closer to the yolk. 
  5. Allow the egg to cook for 3-4 minutes depending on firmness desired. Lift eggs out with a slotted spoon. Now you have your pretty poached egg, it's this simple! Repeat for as many eggs as you want.
Note:
For a medium-poached egg, let it cook for about 2 min 30secs.
For a hard-poached egg, let it cook for about 3 min 30secs.


Hollandaise Sauce (4 servings)

Ingredients:
  • 3 egg yolks
  • 1 tablespoon lemon, juiced
  • 1 teaspoon water
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/2 cup butter
Steps:
  1. Whisk egg yolks, lemon juice, water, salt and pepper in a small bowl.
  2. Melt butter in a saucepan over low heat. 
  3. Gradually whisk yolk mixture into butter.
  4. Continue whisking over low heat until sauce has thickened. 
  5. Serve immediately.

What Makes You Beautiful - One Direction (Jason Chen x Cathy Nguyen)

Having a yummy supper now as I am blogging. Oh my, I have been having suppers everyday. How to not get fat? :O I can't resist food at all. 

Supper: Scrambled eggs with soy milk, smoked salmon, toast. 
I love breakfast kind of food. All my favourites here :D

Second round of supper: Fruit cake
I am a big fan of pastries and cakes! Saw this at the supermarket and couldn't help but grab it.

Lunch: Macaroni and salmon cooked with tomato sauce.

My bro told me I had to try cooking this and I doubted it. I thought salmon is always eaten with cream sauce so I was hesitating when he said it was good with tomato sauce. Not even the tomato based pasta sauce, but really just ketchup. Anyway I decided to try and it actually turned out fine! Simple and tasty! :D 

Cleared another midterm today! Hmm, it's really different here. I think I have mentioned before, but I will still say again, their midterms here are really so manageable, you don't really have to wreck your brains to solve any questions. Perhaps like 1 out of 20 questions requires slightly more thinking. But the bulk of it is like if you study, you memorized, you will definitely score. Full marks is definitely possible. But my memory sucks, so I had a hard time trying to regurgitate information. I told myself, I am just aiming for a pass so I was cool with it. Not going to stress over that bit. 

Two assignments due next week and I haven't started on them. Really don't feel like putting in much effort this is bad:/ 
I find solitude so comforting that I can't leave it.

I feel like I am about to explode.

Best combination ever, really love dipping biscuits into milo/coffee. This could be my daily supper. But I cant afford to do this everyday because I only brought one pack of milo over :(  

Had fried bee hoon for dinner yesterday! (Y)

More fried bee hoon for packed lunch today. 
I have never eaten a meal in school before except for Tim Hortons snacks and coffee because we always pack our own lunch for school! We would just microwave our food before eating. 
Cheap & good! 

Yummy fried bee hoon and chicken breasts with asian 5 spice sauce.
Reminds me of ah lian, but a healthier version :D

Running out of ideas on what to cook :/

Have been sleeping for an average of 5 to 6 hours everyday for awhile I AM SO TIRED. Really want to try to adopt a healthy lifestyle by sleeping for 7 to 8 hours, or even sleeping before 11pm since it has been proven that the best sleeping time is 11pm to 1am. Apparently the best time to wake up is 5am to 7am. I have a super bad digestive system since forever and my TCM physician has advised me to sleep early but I never did. This was never possible in uni life! :< But then again, I shouldn't be wasting time on sleeping right. Sleep is for the weak! Okay, Idk what to do now.
