Recipe: Eggs Benedict

This is dedicated to my friends who wanted me to cook eggs benedict for you when I go back. I have compiled an easy eggs benedict recipe. You may want to try it on your own cause it's pretty simple! Not that I won't cook for you, but you can always try it out yourself first :D So far I have only tried it with smoked salmon, will try making it with pulled pork the next time round! Let me know how it goes if you do try it :)



Poached Eggs 

Ingredients:
  • Eggs
  • 1 to 2 teaspoons of vinegar
Steps:
  1. Bring water in a pot to almost a boil. If water is boiling, lower the heat until it is simmering. Add 1 to 2 teaspoons of vinegar.
  2. Crack an egg into a small cup. 
  3. Using a spoon, swirl water in a circular motion. While water is swirling, gently and slowly drop the egg with the cup near the surface of the water. It is alright to submerge the cup a little. 
  4. Use a spoon to nudge the egg whites closer to the yolk. 
  5. Allow the egg to cook for 3-4 minutes depending on firmness desired. Lift eggs out with a slotted spoon. Now you have your pretty poached egg, it's this simple! Repeat for as many eggs as you want.
Note:
For a medium-poached egg, let it cook for about 2 min 30secs.
For a hard-poached egg, let it cook for about 3 min 30secs.


Hollandaise Sauce (4 servings)

Ingredients:
  • 3 egg yolks
  • 1 tablespoon lemon, juiced
  • 1 teaspoon water
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/2 cup butter
Steps:
  1. Whisk egg yolks, lemon juice, water, salt and pepper in a small bowl.
  2. Melt butter in a saucepan over low heat. 
  3. Gradually whisk yolk mixture into butter.
  4. Continue whisking over low heat until sauce has thickened. 
  5. Serve immediately.
